Polyethylene (HDPE) is softer. It absorbs knife impact, which is gentler on blades. Polypropylene (PP) is harder and more rigid—it's better for high-heat environments (dishwasher safe) but dulls knives faster.

My rule of thumb from a quality perspective: If you're mass-producing cutting boards for commercial kitchens, go with HDPE. It's more forgiving on blade wear tests. If you're doing a retail product where dishwasher safety is a selling point, PP wins. But check the datasheet for the specific melting point—not all PP grades are equally heat-resistant.
